  • 3 tbsp Kewpie Mayo Can be replaced with regular mayo
  • 1 tbsp Sriracha Adjust to taste
  • 1 tbsp Sesame Oil Use olive oil as a substitute if needed
For the Sushi Rice Base
  • 2 cups Sushi Rice Can substitute regular short-grain rice
  • 3 tbsp Rice Vinegar Apple cider vinegar is an alternative
  • 1 tbsp White Sugar Can replace with honey if desired
For the Nori Cups
  • 4 sheets Nori Sheets Essential for the sushi cups
  • 1 tbsp Cooking Spray Any cooking oil can be substituted
For the Garnish
  • 1 tbsp Furikake Optional, can use sesame seeds instead
  • 2 tbsp Green Onion Chives can be used as an alternative

Method
 

Step-by-Step Instructions
  1. Prepare the Sushi Rice: Cook sushi rice according to package instructions, mix with warmed rice vinegar and white sugar, then set aside to cool.
  2. Preheat Your Oven: Preheat your oven to 400°F (200°C).
  3. Combine the Salmon Filling: Mix cubed salmon, light soy sauce, Kewpie mayo, sriracha, and sesame oil in a bowl.
  4. Prepare the Nori Sheets: Cut nori into rectangles and coat lightly with cooking spray.
  5. Layer the Sushi Rice: Press a spoonful of sushi rice into the base of each nori-lined muffin cup.
  6. Add the Salmon Mixture: Spoon the salmon mixture on top of the sushi rice in each cup.
  7. Bake the Sushi Cups: Place in the oven for about 15 minutes or until golden brown.
  8. Add Final Touches: Allow to cool, then drizzle with sriracha/mayo and sprinkle with furikake and green onions.
