  • 8 oz Rigatoni pasta Substitute with penne or farfalle as needed.
  • 4 oz Feta cheese, crumbled Goat cheese is a great alternative.
  • 1 cup Dried cranberries Consider dried cherries if you prefer.
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh parsley, chopped
For the Vinaigrette
  • 1/2 cup Olive oil
  • 1/4 cup Lemon juice Fresh lemon is best.
  • 1 tbsp Honey
  • 1 tbsp Dijon mustard
  • to taste Salt & Black pepper Essential for flavor.

Step-by-Step Instructions
  1. Boil the Pasta: Bring a large pot of salted water to a boil, add the rigatoni, and cook according to package instructions until al dente.
  2. Drain and Cool the Pasta: Drain the rigatoni and rinse with cold water to stop cooking. Transfer to a mixing bowl.
  3. Add the Feta Cheese: Crumble feta into small pieces and fold into the pasta.
  4. Incorporate the Cranberries and Onion: Add dried cranberries and finely chopped red onion; toss everything gently.
  5. Add Fresh Parsley: Chop fresh parsley and mix with the pasta mixture.
  6. Whisk the Vinaigrette: In a separate bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, and season to taste.
  7. Toss the Salad: Pour vinaigrette over the salad and gently toss until all ingredients are coated.
