Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, and optional chipotle chili powder. Coat the chicken breasts evenly with the marinade and let marinate in the refrigerator for at least 30 minutes.
  2. In a large mixing bowl, combine the cherry tomatoes, fresh corn, red onion, red bell pepper, jalapeno, cilantro, and minced garlic. Squeeze in additional lime juice, sprinkle with cumin, and mix gently. Chill in the refrigerator.
  3. Preheat your grill or a large skillet over medium-high heat. Cook the marinated chicken breasts for 3-5 minutes until golden brown, flip, cover, and cook for another 5-7 minutes until fully cooked.
  4. Let the cooked chicken rest for about 5 minutes, then slice against the grain into strips and serve alongside the fresh Avocado Corn Salsa.
