Coleslaw

  • 0.5 cup Macadamia Nuts Sunflower seeds can be used for a nut-free option.

Method
 

Preparing the Coleslaw
  1. In a medium mixing bowl, whisk together Greek yogurt, Dijon mustard, apple cider vinegar, and pineapple juice. Stir in kosher salt and pepper.
  2. In a large bowl, combine coleslaw mix, pineapple tidbits, and macadamia nuts. Toss gently to mix.
  3. Drizzle the prepared dressing over the coleslaw mixture and gently fold until coated.
  4. Serve immediately or refrigerate covered for up to two hours.
