For the Chive & Onion Spread
  • 4 ounces Cream Cheese Vegan cream cheese can be used for dairy-free.
  • 1/4 cup Non-fat Greek Yogurt Sour cream works as a substitute.
  • 2 tablespoons Green Onions/Chives Shallots can substitute if in a pinch.
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder

Method
 

Step-by-Step Instructions
  1. In a small mixing bowl, combine cream cheese with Greek yogurt. Add finely chopped green onions, chives, onion powder, and garlic powder. Mix until creamy and smooth.
  2. Take two slices of bread and lightly toast them for about 3-4 minutes or until golden brown.
  3. On one slice of toasted bread, spread a layer of the chive and onion mix, then layer with spinach, pepper jack and Swiss cheese, mashed avocado, cucumber, and Roma tomato, finishing with alfalfa sprouts and sunflower seeds.
  4. Spread another thin layer of the chive and onion spread on the second slice of bread and place it on top of the sandwich.
  5. Slice the sandwich in half diagonally and serve immediately, optionally with chips or a side salad.
