- In a small mixing bowl, combine cream cheese with Greek yogurt. Add finely chopped green onions, chives, onion powder, and garlic powder. Mix until creamy and smooth.
- Take two slices of bread and lightly toast them for about 3-4 minutes or until golden brown.
- On one slice of toasted bread, spread a layer of the chive and onion mix, then layer with spinach, pepper jack and Swiss cheese, mashed avocado, cucumber, and Roma tomato, finishing with alfalfa sprouts and sunflower seeds.
- Spread another thin layer of the chive and onion spread on the second slice of bread and place it on top of the sandwich.
- Slice the sandwich in half diagonally and serve immediately, optionally with chips or a side salad.
