Step-by-Step Instructions for Fresh Raspberry Tiramisu
  1. In a saucepan, combine 2 cups of fresh raspberries, 3/4 cup of granulated sugar, and 2 tablespoons of lemon juice. Cook over medium heat for about 25 minutes until thickened.
  2. In a small saucepan, bring 3/4 cup of sugar, 1 cup of water, and 1 cup of raspberries to a simmer. Strain the liquid and mix with 1/4 cup of limoncello.
  3. In a large mixing bowl, combine mascarpone cheese, powdered sugar, lemon juice, and vanilla paste. Beat until smooth. Whip heavy cream and fold into the mascarpone mixture.
  4. In a rectangular dish, layer mascarpone filling, dipped ladyfingers, and raspberry jam. Repeat the layers, ending with mascarpone filling. Refrigerate for at least 8 hours.
  5. Before serving, top with remaining raspberry jam, fresh raspberries, and lemon slices. Cut into squares and serve chilled.
