- Begin by rinsing fresh strawberries under cool water. Remove the green tops and slice them into smaller pieces.
- In a blender, combine the prepared strawberries with granulated sugar and pulse until smooth. Reserve half a cup of the puree in a separate bowl.
- In a large mixing bowl, pour in heavy whipping cream. Beat with an electric mixer until soft peaks form, then increase speed to medium-high until stiff peaks form.
- Gently fold the reserved strawberry puree into the whipped cream using a spatula.
- Divide the reserved strawberry puree into serving glasses, then spoon the mousse mixture on top.
- Cover with plastic wrap and refrigerate for at least 1 hour to allow the mousse to set.
- Garnish each glass with additional fresh strawberries and mint leaves just before serving.
