  • 1 cup Strawberries quartered and ripe
  • 1 medium Cucumber sliced and dried
  • 1 cup Feta Cheese crumbled
  • 1/4 cup Fresh Mint chopped
For the Vinaigrette
  • 1 /4 cup Lemon Vinaigrette
Optional Toppings
  • 1/4 cup Toasted Pumpkin Seeds
  • 1/4 cup Pistachios

Method
 

Preparation Steps
  1. Wash and pat dry strawberries and cucumber. Cut strawberries into quarters, cucumber into bite-sized slices, and scoop watermelon into cubes.
  2. In a large mixing bowl, gently toss together prepared watermelon, strawberries, and cucumber. Allow to sit for 2 minutes.
  3. Drizzle lemon vinaigrette over the mixture and toss gently with a spatula.
  4. Crumble feta cheese atop the salad and sprinkle with freshly chopped mint leaves.
