  1. Begin by cutting your sirloin or ribeye into 1-inch cubes. Pat the steak pieces dry with a paper towel and season generously with salt and black pepper. Let the steak sit at room temperature for about 15 minutes.
  2. Place a large cast-iron skillet on the stove and heat it over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer.
  3. Add the steak cubes to the skillet in a single layer, searing for 2-3 minutes until a golden-brown crust forms. Flip and cook for another 2-3 minutes, then set aside.
  4. Reduce heat to medium, add 4 tablespoons of unsalted butter and the minced garlic. Stir occasionally until the garlic becomes fragrant.
  5. Return the steak bites to the skillet, coating them in the garlic butter. Add thyme and rosemary, stirring gently for another minute.
