- Preheat your oven to 400°F (200°C). Slice a baguette or ciabatta into ½-inch thick pieces and arrange them on a baking sheet. Drizzle with extra virgin olive oil and bake for 8-10 minutes until golden brown.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Then add shrimp seasoned with smoked paprika, cumin, salt, and pepper. Cook for 2-3 minutes until shrimp is pink and opaque.
- While the shrimp cooks, mash the ripe avocado in a bowl and mix in lime juice, salt, and pepper to taste.
- Spread the avocado mixture on each crispy crostini and top with sautéed garlic shrimp.
- Serve immediately, garnished with lime wedges or fresh herbs if desired.
