  • 2 pieces Scallion Chopped; use white parts for cooking and reserve green tops for garnish.
  • 1 piece Pepper Diced; you can swap for poblano or bell pepper.
  • 4 cloves Garlic Thinly sliced; increase or decrease according to preference.
For the Flavor Boost
  • 1/4 cup Mirin If unavailable, use cooking sake mixed with sugar.
  • 1 tablespoon Ginger Grated; freeze the root for easier grating.
  • 1 teaspoon Turmeric Remember to pair with black pepper.
  • 1 piece Lime Juiced; can substitute with lemon.
For the Veggie Boost
  • 2 cups Kale Chopped; can substitute with spinach or Swiss chard.
  • 1 cup Cilantro Fresh; can use parsley if cilantro isn’t preferred.

Method
 

Directions
  1. Sauté garlic in olive oil over medium-low heat until golden brown, about 2 minutes.
  2. Stir in diced onion and salt; cook until translucent, about 3-4 minutes.
  3. Add chopped scallions and diced pepper; sauté for another minute.
  4. Incorporate grated ginger, turmeric, and remaining garlic; stir for 1 minute.
  5. Deglaze pot with mirin, scraping the bottom; simmer for 1-2 minutes.
  6. Pour in vegetable broth and stir in couscous and a bay leaf; bring to a boil, then simmer for 13-15 minutes.
  7. Add chopped kale and cilantro; stir until kale wilts down, about 2-3 minutes.
  8. Remove from heat, squeeze lime juice, and season with salt and pepper.
  9. Ladle soup into bowls and garnish with toppings; serve warm.
  10. Store leftovers in airtight containers, cool completely before sealing.
