Method
 

Preparation Steps
  1. Start by cutting the boneless skinless chicken thighs into 1-inch pieces and placing them in a large mixing bowl.
  2. In a separate bowl, whisk together soy sauce, honey, vegetable oil, rice vinegar, minced garlic, ground ginger, black pepper, and red pepper flakes.
  3. Pour the marinade over the diced chicken and use tongs to toss everything together gently.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 8 hours.
  5. While the chicken marinates, preheat your grill to medium-high heat, about 375°F to 450°F.
  6. After marinating, thread the chicken pieces onto the skewers, leaving a little space between each piece.
  7. Grill the assembled skewers for 10-12 minutes, turning occasionally to achieve an even char.
  8. Once done, let the skewers rest for a few minutes before serving.
