  • 2 ears Corn grilled
  • 4 stalks Scallions lightly seared
  • 1 cup Edamame fresh or frozen
  • 1 cup Artichoke Hearts marinated preferred
For the Dressing
  • 2 cloves Garlic minced and sautéed
  • 1 Lemon juice and zest
  • 1 tbsp Miso Paste or nutritional yeast
  • 0.25 cup Fresh Dill
  • 3 tbsp Oil avocado or olive oil
Additional Flavors
  • 1 tsp Oregano
  • 2 cups Arugula or baby kale
  • 0.5 cup Vegan Parm optional

Method
 

Step-by-Step Instructions
  1. Cook the Orzo: Bring a large pot of salted water to a boil, add orzo and cook for 8-10 minutes until al dente. Drain and cool in a mixing bowl.
  2. Grill the Corn: Preheat grill pan, grill corn for 10-12 minutes until charred. Cool slightly and remove kernels.
  3. Sear Scallions and Cook Garlic: Sear scallion whites in the grill pan for 1-2 minutes. Sauté minced garlic until golden brown in a separate pan.
  4. Make the Dressing: Blend sautéed garlic, seared scallions, lemon zest, juice, vinegar, oil, miso, and salt until smooth. Add dill and blend again.
  5. Assemble the Salad: Combine orzo, grilled corn, remaining scallions, artichoke hearts, edamame, oregano, and arugula in a bowl. Toss and drizzle dressing over it.
  6. Serve or Store: Enjoy immediately or refrigerate for up to 4 days. Top with shaved vegan parmesan when serving.
