  • 1/4 cup Fresh Parsley Chopped.
  • 1/4 cup Fresh Mint Chopped.

Method
 

Step‑by‑Step Instructions
  1. In a large bowl, whisk together plain yogurt, minced garlic, freshly grated ginger, and all the spices until well combined. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 2 hours.
  2. After marinating, discard the excess marinade. Preheat your grill to 400°F. Pat the chicken thighs dry and thread onto skewers.
  3. Grill the chicken skewers for approximately 6-8 minutes, turning occasionally until a beautiful char is achieved. Ensure internal temperature reaches 165°F.
  4. Prepare the tzatziki sauce by whisking together cucumber, lemon juice, parsley, and mint. Season with salt and pepper. Refrigerate until ready to serve.
  5. Once grilled, let the skewers rest for a few minutes. Serve warm with tzatziki sauce on the side.
