  • 8 tablespoons Coconut Cream Total for marinade and glaze
  • 2 tablespoons Sugar
  • 1 tablespoon Oyster Sauce Optional
  • 1.5 tablespoons Honey Can substitute with maple syrup
For the Peanut Sauce
  • 0.25 cup Natural Peanut Butter Unsweetened
  • 1 teaspoon Rice Vinegar Apple cider vinegar is a substitute
  • 1 teaspoon Thai Red Curry Paste Adjust for heat preference
  • 2 teaspoons Maple Syrup Can substitute with white sugar
  • 2-3 tablespoons Water To thin out the sauce
  • 1 teaspoon Sesame Oil Optional
  • 1 teaspoon Chili Oil Optional for heat
  • Crushed Peanuts Optional garnish

Method
 

Preparation Steps
  1. Cut chicken into 1-inch chunks and marinate with marinade ingredients for 1-2 hours or overnight.
  2. Soak wooden skewers in water for at least 30 minutes.
  3. Thread marinated chicken onto the skewers, leaving space between pieces.
  4. Mix 6 tablespoons of coconut cream with honey and soy sauce for the glaze.
  5. Preheat grill to high temperature at 500°F (260°C).
  6. Grill skewers for about 15-18 minutes, flipping every 2-3 minutes until cooked through.
  7. Brush coconut glaze on skewers in the last few minutes of grilling.
  8. Let skewers rest for a few minutes before serving.
