  • 1 cup Bell Pepper any color can be used; zucchini is a lighter option
  • 2 cups Spinach or Kale or use other leafy greens like Swiss chard
  • 1 cup Cheddar Cheese can mix with mozzarella or use vegan cheese
  • 1 tablespoon Olive Oil can substitute with avocado oil or melted butter
  • to taste Salt and Pepper essential for flavor enhancement
  • 1 teaspoon Paprika can substitute with cayenne for more spice
  • 1 teaspoon Dried Thyme fresh thyme is a great alternative

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add in the ground turkey, seasoning with salt, pepper, paprika, and thyme. Sauté for about 5-7 minutes until the turkey is fully browned.
  3. Add diced onion and bell pepper into the skillet with the cooked turkey and sauté for another 5 minutes until softened.
  4. Stir in the spinach or kale and cook for an additional 2-3 minutes until wilted.
  5. In a large mixing bowl, combine the turkey and vegetable mixture with cubed sweet potatoes, tossing gently.
  6. Pour the mixture into a greased baking dish, top with cheddar cheese, and bake for 25-30 minutes until the cheese is bubbly and golden brown.
  7. Remove from the oven and let it sit for 5-10 minutes before serving.
