Ingredients
  

For the Chicken
  • 1 pound Boneless Skinless Chicken Thighs can use chicken breasts with reduced cooking time
For the Vegetables
  • 1 cup Pineapple Chunks fresh or drained canned
  • 2 medium Bell Peppers (red and yellow) cut into strips
  • 1 medium Red Onion sliced thinly
For the Sauce
  • 1/4 cup Soy Sauce or coconut aminos for gluten-free
  • 1/4 cup Pineapple Juice freshly squeezed or canned
  • 2 tablespoons Honey or Brown Sugar adjust to taste
  • 2 tablespoons Rice Vinegar or Apple Cider Vinegar
  • 3 cloves Garlic minced
For Cooking
  • 2 tablespoons Olive Oil for roasting
  • 1 tablespoon Cornstarch + Water optional, to thicken glaze

Method
 

Preparation Instructions
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a medium-sized bowl, whisk together soy sauce, pineapple juice, honey, and rice vinegar until well combined.
  3. Pat chicken thighs dry and marinate with half of the prepared sauce for at least 15 minutes.
  4. Spread marinated chicken on the sheet pan and add pineapple, bell peppers, and red onion. Drizzle with olive oil and toss to coat.
  5. Roast in the preheated oven for about 25–30 minutes, flipping chicken halfway through cooking.
  6. Brush chicken with remaining sauce during the last 10 minutes of roasting.
  7. Optionally, broil for 2–3 minutes for extra caramelization.
  8. Let the dish sit for a few minutes before serving. Garnish with sesame seeds or chopped cilantro.
