  • 1/2 cup Pumpkin Seeds
  • 1/4 cup Chia Seeds
  • 1/4 cup Flaxseeds ground for better digestibility
  • 1/2 cup Dried Cranberries (or Raisins) can substitute with other dried fruits
  • 1/2 cup Natural Peanut Butter or Almond Butter substitute with sunflower seed butter for nut-free
  • 1/4 cup Honey or Maple Syrup use maple syrup for vegan version
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt.
  3. Melt the peanut butter and honey (or maple syrup) over low heat until smooth and creamy. Stir in vanilla extract.
  4. Pour the melted peanut butter mixture over the dry ingredients and mix until fully combined.
  5. Shape the mixture onto the baking sheet into rounds, about 1/2 inch thick, spacing them an inch apart.
  6. Bake for 12–15 minutes until golden brown and firm to the touch.
  7. Remove from the oven and transfer to a wire rack to cool completely.
  8. Store cookies in an airtight container at room temperature for up to a week.
