  • 1 tablespoon white sugar Can use honey or agave syrup
  • 2 tablespoons oyster sauce Mushroom sauce for vegetarian option
  • 2 tablespoons cornstarch Use tapioca starch or all-purpose flour if necessary
  • 1 teaspoon sesame oil Any neutral oil can be a substitute
For the Wrappers
  • 24 pieces dumpling wrappers Opt for gluten-free if needed
  • 1/4 cup crispy fried garlic For garnishing and texture

Method
 

Step-by-Step Instructions
  1. Using a mortar and pestle, finely crush the coriander roots, black peppercorns, and garlic until smooth.
  2. In a medium bowl, combine the Golden Mountain sauce, white sugar, sesame oil, and oyster sauce. Stir until the sugar dissolves.
  3. In a food processor, add ground pork, sauce mixture, beaten egg, and cornstarch. Pulse until smooth and creamy.
  4. Transfer the filling mixture to a bowl and mix in the contents from Step 1, along with shredded carrot, green onions, and shiitake mushrooms.
  5. Take a dumpling wrapper, add about a tablespoon of filling inside, moisten the edges, fold and pinch to seal tightly.
  6. Prepare a steamer lined with parchment paper and steam the dumplings for about 10 minutes or until the wrappers are translucent and filling is cooked.
