- Combine equal parts of 80/20 chuck beef and 90/10 sirloin beef in a large bowl. Mix gently until just combined, and divide into 3.3 ounces meatballs.
- Place each meatball on a cold cookie sheet, and press down with a heavy pot or skillet to create flat patties about half an inch thick.
- Preheat one griddle to medium-high heat and another skillet to medium-low for toasting the buns for about 5 minutes.
- Carefully place smashed patties onto the hot griddle for the first 30 seconds without touching. Flip and cook for an additional 2-3 minutes until crispy.
- Toast sesame seed buns, cut side down, on the medium-low skillet for 2-3 minutes, until light golden brown.
