  2. In a medium-sized skillet, melt 4 tablespoons of unsalted butter over medium heat.
  3. Add ½ cup of packed brown sugar, stirring until bubbling and smooth, for about 2-3 minutes.
  4. Add sliced ripe bananas, ground cinnamon, and dark rum to caramel, cooking for 5-7 minutes.
  5. In a large bowl, whisk together flour, remaining ¼ cup brown sugar, baking powder, and salt.
  6. Pour in heavy cream and vanilla extract; stir until just combined.
  7. Spread caramelized bananas in the baking dish, then drop dollops of cobbler batter over them.
