Preparation Steps
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine the blueberries, sugars, lemon zest, lemon juice, and cornstarch. Cook over medium heat for about 5-7 minutes until the blueberries burst.
- In a mixing bowl, beat the cream cheese until smooth. Add the egg yolk, sugar, vanilla extract, and lemon juice, mixing until combined.
- Roll out one sheet of puff pastry on a floured surface into a rectangle about 1/8 inch thick. Place it on the baking sheet.
- Spread the cream cheese filling over the first pastry. Top it with the cooled blueberry filling.
- Place the second sheet of puff pastry on top. Cut into diagonal strips and shape into crescents.
- Whisk the egg for egg wash and brush over the pastries.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Dust with powdered sugar after cooling for 5 minutes before serving.
