Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease your baking dish with nonstick spray.
  2. In a skillet, heat a drizzle of oil over medium heat. Sauté the diced onion for about 5 minutes until soft.
  3. In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the grated Parmesan cheese. Mix gently until combined.
  4. Transfer the mixture into the prepared baking dish and shape it into a loaf.
  5. Sprinkle the remaining grated Parmesan cheese over the top of the meatloaf.
  6. Bake the meatloaf in the preheated oven for 45-50 minutes, until the internal temperature reaches 165°F (74°C).
  7. Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
