Preparation Steps
- Preheat your oven to 375°F (190°C) and grease your baking dish with nonstick spray.
- In a skillet, heat a drizzle of oil over medium heat. Sauté the diced onion for about 5 minutes until soft.
- In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the grated Parmesan cheese. Mix gently until combined.
- Transfer the mixture into the prepared baking dish and shape it into a loaf.
- Sprinkle the remaining grated Parmesan cheese over the top of the meatloaf.
- Bake the meatloaf in the preheated oven for 45-50 minutes, until the internal temperature reaches 165°F (74°C).
- Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
