Step-by-Step Instructions
  1. Soak wooden skewers in water for 10–20 minutes to prevent burning.
  2. In a medium bowl, combine soy sauce, water, red wine or mirin, brown sugar, and rice vinegar. Whisk until the sugar dissolves.
  3. Trim excess fat from chicken and cut into 1–2 inch chunks.
  4. In a separate bowl, mix minced garlic, grated ginger, and pepper with 1/4 cup yakitori sauce. Toss in chicken chunks.
  5. Pour remaining yakitori sauce into a saucepan and bring to a gentle boil. Mix cornstarch with cold sauce to create a slurry, then stir it into boiling sauce and cook until thickened.
  6. Thread marinated chicken onto soaked skewers, preheat grill to medium-high heat, and grill for 8–12 minutes, basting occasionally with thickened sauce.
