Ingredients
  

For the Crust
  • 16 cookies Oreo Cookies with filling used
  • 1/2 cup Unsalted Butter melted
For the Brownie Layer
  • 8 oz Bittersweet Chocolate chopped
  • 1/4 cup Vegetable Oil or melted coconut oil
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 cup Dark Brown Sugar packed
  • 2 large Large Eggs room temperature
  • 1/2 cup All-Purpose Flour
For the Mousse Layer
  • 1 cup Heavy Cream divided
  • 1/4 cup Powdered Sugar
  • 1 pinch Salt
For the Topping
  • 6 cookies Additional Oreo Cookies crushed

Method
 

Make the Crust
  1. Preheat your oven to 325°F (163°C). Pulse the Oreos into fine crumbs with a food processor, mix with melted butter, and press into a 9-inch pie plate. Bake for 15 minutes and let cool.
Prepare the Brownie Layer
  1. Melt together bittersweet chocolate, butter, oil, and cocoa powder in a saucepan. In a separate bowl, whisk eggs, brown sugar, vanilla, and salt. Combine and pour into the cooled crust, baking for 15 minutes, then let cool.
Make the Topping
  1. Crush additional Oreos and mix with melted butter and cocoa powder. Spread on a baking sheet and bake at 350°F (177°C) for 10 minutes, then let cool.
Prepare the Mousse
  1. Melt milk chocolate and cool. In a saucepan, heat cream and mix with cocoa and powdered sugar. Whip remaining cream and fold in melted chocolate.
Assemble and Chill
  1. Spread mousse over brownie layer, top with Oreo topping, cover with plastic wrap and refrigerate for at least 3 hours, preferably overnight.

Notes
