- Start by bringing a large pot of salted water to a boil over high heat. Add pasta and cook according to package instructions (8-10 minutes).
- In a large skillet, heat oil over medium heat. Add sliced onions with a pinch of salt and sauté for 5 minutes until softened.

- Drain pasta, reserving 1 cup of pasta water. Stir in sun-dried tomatoes, balsamic glaze, tamari, and reserved water into the skillet.
- Add the drained pasta to the skillet, tossing gently. Adjust with more pasta water for desired creaminess.
- Serve warm, garnished with fresh parsley. Optional: top with roasted chickpeas or crispy tofu.
