Method
 

Cooking Instructions
  1. Start by bringing a large pot of salted water to a boil over high heat. Add pasta and cook according to package instructions (8-10 minutes).
  2. In a large skillet, heat oil over medium heat. Add sliced onions with a pinch of salt and sauté for 5 minutes until softened.
  3. Continue cooking onions for another 15 minutes until deep golden brown, stirring regularly. Add water if they stick.
  4. Add minced garlic, Italian seasoning, and red pepper flakes to the onions. Sauté for 3-4 minutes until fragrant.
  5. Drain pasta, reserving 1 cup of pasta water. Stir in sun-dried tomatoes, balsamic glaze, tamari, and reserved water into the skillet.
  6. Add the drained pasta to the skillet, tossing gently. Adjust with more pasta water for desired creaminess.
  7. Serve warm, garnished with fresh parsley. Optional: top with roasted chickpeas or crispy tofu.
