- Preheat your oven to 425°F (220°C) with a pizza stone inside for about 15-20 minutes.
- Roll or stretch your prepared pizza dough into a 12-inch round on a floured surface.
- Spread about 2 tablespoons of Gochujang BBQ sauce over the pizza dough, leaving a ½-inch border.
- Sprinkle ½ to ¾ cup of grated mozzarella cheese over the BBQ sauce evenly.
- Thinly slice the leftover Korean BBQ chicken thighs and distribute them over the cheese.
- Squeeze excess liquid from the kimchi and scatter it over the chicken and cheese.
- Add an additional ¼ cup of mozzarella on top of the kimchi and drizzle more Gochujang BBQ sauce.
- Bake the assembled pizza on the preheated pizza stone for 15-20 minutes until golden.
- Cool for a few minutes, garnish with sliced scallions, slice, and enjoy!
