Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) with a pizza stone inside for about 15-20 minutes.
  2. Roll or stretch your prepared pizza dough into a 12-inch round on a floured surface.
  3. Spread about 2 tablespoons of Gochujang BBQ sauce over the pizza dough, leaving a ½-inch border.
  4. Sprinkle ½ to ¾ cup of grated mozzarella cheese over the BBQ sauce evenly.
  5. Thinly slice the leftover Korean BBQ chicken thighs and distribute them over the cheese.
  6. Squeeze excess liquid from the kimchi and scatter it over the chicken and cheese.
  7. Add an additional ¼ cup of mozzarella on top of the kimchi and drizzle more Gochujang BBQ sauce.
  8. Bake the assembled pizza on the preheated pizza stone for 15-20 minutes until golden.
  9. Cool for a few minutes, garnish with sliced scallions, slice, and enjoy!
