- Preheat your oven to 350°F (175°C).
- Spray two 8x4 inch loaf pans generously with cooking spray.
- In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, baking soda, salt, and pumpkin pie spice. Whisk together thoroughly.
- In a separate bowl, mash ripe bananas and add applesauce, peanut butter, oil, eggs, and vanilla extract. Mix until fully combined.
- Gently incorporate the wet mixture into the dry ingredients, stirring until just combined. Fold in the miniature semi-sweet chocolate chips.
- Divide the batter evenly between the prepared loaf pans halfway, and optionally sprinkle additional chocolate chips on top.
- Bake for 45-50 minutes, loosely covering with foil during the last 15 minutes if needed.
