Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Spray two 8x4 inch loaf pans generously with cooking spray.
  3. In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, baking soda, salt, and pumpkin pie spice. Whisk together thoroughly.
  4. In a separate bowl, mash ripe bananas and add applesauce, peanut butter, oil, eggs, and vanilla extract. Mix until fully combined.
  5. Gently incorporate the wet mixture into the dry ingredients, stirring until just combined. Fold in the miniature semi-sweet chocolate chips.
  6. Divide the batter evenly between the prepared loaf pans halfway, and optionally sprinkle additional chocolate chips on top.
  7. Bake for 45-50 minutes, loosely covering with foil during the last 15 minutes if needed.
  8. Check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  9. Let the bread cool in the pans for 15-20 minutes before transferring to a wire rack to cool completely.
