Method
 

Step-by-Step Instructions
  1. In a skillet, heat 2 tablespoons of avocado oil over medium-low heat. Add 1 finely diced onion and sauté for 8-10 minutes until golden brown.
  2. While the onions are cooking, julienne 4-5 fresh carrots and place them in a mixing bowl. Season with 1 teaspoon of kosher salt and 1 teaspoon of sugar, then mix.
  3. Create a well in the center, add 1 teaspoon of ground coriander, 1 teaspoon of smoked paprika, a pinch of cayenne, and 2 minced garlic cloves. Mix well.
  4. Once the onions are ready, strain them, allowing the hot oil to drizzle over the carrot mixture. Let sit for about a minute, then stir together.
  5. Fold in 1/4 cup of chopped cilantro and 3 tablespoons of white vinegar. Mix thoroughly, then refrigerate for at least 4 hours before serving.
