- Preheat your oven to 400°F (200°C) and prepare a 9x13-inch baking dish by coating it with non-stick spray.
- In a large bowl, combine 1.5 pounds of cubed chicken and 4 cups of diced potatoes. Toss to mix well.
- In a small bowl, mix together olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, and cumin. Add salt and pepper to taste.
- Pour the mixture over the chicken and potatoes, tossing to coat thoroughly, and transfer to the prepared baking dish.
- Bake for 45 to 55 minutes, stirring every 10-15 minutes until chicken is cooked through and potatoes are tender.
- Remove from oven and top with half of the cheese, followed by crumbled bacon and green onions.
