  • 4 cups diced potatoes preferably Yukon Gold or Russet
  • 3 tablespoons olive oil or vegetable oil
  • 3 tablespoons unsalted butter can be replaced with more oil for a dairy-free version
  • 1 teaspoon smoked paprika or sweet paprika
  • 1 teaspoon garlic powder fresh garlic works well too
  • 0.5 teaspoon crushed red chili flakes adjust according to taste
  • 0.25 teaspoon cumin optional
  • salt to taste
  • pepper to taste
  • 1.5 cups Colby Jack cheese divided
  • 8 slices bacon cooked and crumbled; turkey bacon is a lighter alternative
  • 0.5 cup green onion chopped; chives can be used

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a 9x13-inch baking dish by coating it with non-stick spray.
  2. In a large bowl, combine 1.5 pounds of cubed chicken and 4 cups of diced potatoes. Toss to mix well.
  3. In a small bowl, mix together olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, and cumin. Add salt and pepper to taste.
  4. Pour the mixture over the chicken and potatoes, tossing to coat thoroughly, and transfer to the prepared baking dish.
  5. Bake for 45 to 55 minutes, stirring every 10-15 minutes until chicken is cooked through and potatoes are tender.
  6. Remove from oven and top with half of the cheese, followed by crumbled bacon and green onions.
  7. Top with the remaining cheese and bake for an additional 5-10 minutes until cheese is bubbly and melted.
  8. Let cool for a couple of minutes before serving and enjoy with your loved ones!
