- Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil.
- Wash and chop zucchini, bell peppers, red onion, and cherry tomatoes. Cut chicken into bite-sized chunks and add everything to a large mixing bowl.
- Drizzle olive oil over the mixture and add oregano, basil, paprika, salt, and pepper. Toss until well coated.
- Transfer the mixture into the prepared baking dish and bake for 30 minutes or until chicken reaches 165°F (74°C).
- Sprinkle feta cheese and parsley on top and serve warm with lemon wedges.
