  • 1/3 cup Sliced Pitted Black Olives omit for a milder flavor
  • 1/2 cup Crumbled Feta Cheese omit for a dairy-free option
For the Dressing
  • 1/2 cup Homemade Greek Salad Dressing adjust garlic level according to taste

Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the Vegetables: Halve the grape tomatoes, slice and quarter the cucumbers, and thinly slice the red onion. Soak onion in cold water if desired. Combine in a bowl with spinach and olives.
  3. Combine Ingredients: Add cooled pasta to the vegetable mixture and gently toss together until evenly mixed.
  4. Add the Dressing: Drizzle the Greek salad dressing over the salad, toss to combine, and adjust seasoning with salt and pepper.
  5. Incorporate Feta Cheese: Sprinkle crumbled feta over the salad and gently toss to combine.
  6. Serve or Chill: Serve immediately or let chill in the refrigerator for 30 minutes to meld flavors.
