  • 2 cups All-Purpose Flour
  • 1 cup Cake Flour
  • 0.5 teaspoon Salt
  • 2 tablespoons Matcha Powder (Ceremonial Grade)
  • 1 cup Unsalted Butter Room temperature
  • 0.75 cup Granulated Sugar
  • 4 large Egg Yolks Do not substitute with whole eggs
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Whole Milk Adjust if dough is too thick

Method
 

Baking Instructions
  1. Line two baking sheets with parchment paper.
  2. Sift together all-purpose flour, cake flour, salt, and matcha powder.
  3. Beat butter until smooth, add sugar and mix until light and fluffy.
  4. Add egg yolks, vanilla extract, and milk, and mix until combined.
  5. Gradually add sifted dry ingredients until just combined.
  6. Transfer dough into a piping bag and pipe onto prepared baking sheets.
  7. Chill the trays in the refrigerator for 1 hour.
  8. Preheat oven to 350°F (175°C).
  9. Bake for 9-11 minutes until edges are lightly golden.
  10. Cool briefly before transferring to a wire rack.
