- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil or butter.
- In a large skillet, brown the ground beef over medium heat for about 6-8 minutes. Drain any excess fat, then add the diced onion and minced garlic. Sauté until fragrant, about 2-3 minutes, before stirring in the cream of mushroom soup and milk until smooth.
- Wash and thinly slice the potatoes to about 1/8 inch thickness. Set these slices aside.
- Layer half of the potato slices in the baking dish, followed by half of the beef mixture and a generous layer of cheddar cheese. Repeat with the remaining potatoes, beef, and top with cheese.
- Cover the casserole tightly with aluminum foil and bake in the preheated oven for 60 minutes.
- Remove the foil and bake uncovered for an additional 15-20 minutes until the cheese is golden and bubbly.
- Let the casserole rest for about 5 minutes before serving.
