  • 1 teaspoon Fresh Ginger Grated
  • 1 clove Garlic Minced

  • 1 tablespoon Sesame Seeds For added texture

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Cut the eggplant into one-inch cubes and toss with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 20-25 minutes, flipping halfway through until tender and slightly caramelized.
  4. In a bowl, whisk together miso paste, mirin, soy sauce, honey, ginger, and garlic until smooth.
  5. Brush the miso glaze over warm eggplant and return to the oven for 5-7 minutes.
  6. Sprinkle with sesame seeds and green onions before serving warm.
