  • 1 tablespoon cornstarch to thicken berry juices
  • 1 large egg for egg wash

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine mixed berries, lemon juice, lemon zest, maple syrup, and cornstarch. Toss gently.
  3. Roll out the puff pastry and cut it into four rectangles. Arrange them on the baking sheet.
  4. Spoon the berry mixture into the center of each pastry, leaving a ½-1 inch border.
  5. Fold the edges of the pastry over the filling, pinching to seal.
  6. Brush the edges with egg wash for a golden finish.
  7. Bake for 20-25 minutes until golden brown and puffed.
  8. Allow to cool slightly before serving warm, optionally topped with vanilla ice cream.
