- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the flour, baking soda, cinnamon, baking powder, salt, and optional nutmeg; mix well.
- In another bowl, whisk together the mashed banana, shredded carrot, sweetener, milk, oil, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold until just combined; don't overmix.
- Spoon the batter into the prepared loaf pan and optionally sprinkle crushed walnuts on top before smoothing the surface.
