- In a large mixing bowl, combine shredded coconut, coconut cream, melted coconut oil, honey or maple syrup, and vanilla extract. Mix until a sticky, cohesive dough forms, about 2-3 minutes.
- Take approximately a tablespoon of the coconut mixture, flatten it slightly in your palm, and place a fresh raspberry in the center. Wrap the mixture around the raspberry, rolling to form a smooth ball.
- Pour additional shredded coconut into a shallow dish and roll each coconut ball in it until evenly coated.
- Line a baking tray with parchment paper and arrange your coconut balls in a single layer. Chill in the refrigerator for at least 30 minutes.
