Step-by-Step Instructions
  1. In a medium bowl or mason jar, mix 1 cup of old-fashioned oats with 1 cup of your favorite non-dairy milk. Add in 2 tablespoons of pure maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Stir in 1 teaspoon of pumpkin pie spice and 2 tablespoons of ground flaxseed until everything is well combined.
  2. Dice one medium peach, reserving half for topping later. Gently fold the chopped peaches into the oat mixture.
  3. Cover your bowl or jar with a lid or plastic wrap and place it in the refrigerator for a minimum of 4 hours, or ideally overnight.
  4. Remove from the fridge, stir the mixture, and add a splash of non-dairy milk if too thick. Top with reserved diced peaches and chopped pecans.
