- In a medium bowl or mason jar, mix 1 cup of old-fashioned oats with 1 cup of your favorite non-dairy milk. Add in 2 tablespoons of pure maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Stir in 1 teaspoon of pumpkin pie spice and 2 tablespoons of ground flaxseed until everything is well combined.
- Dice one medium peach, reserving half for topping later. Gently fold the chopped peaches into the oat mixture.
- Cover your bowl or jar with a lid or plastic wrap and place it in the refrigerator for a minimum of 4 hours, or ideally overnight.
- Remove from the fridge, stir the mixture, and add a splash of non-dairy milk if too thick. Top with reserved diced peaches and chopped pecans.
