Ingredients
  

For the Filling
  • 8 oz Cheese Steak Beef Thinly sliced ribeye or sirloin
  • 4 oz Provolone Cheese Can substitute mozzarella or Swiss
  • 6 oz Mushrooms, chopped Swap for sautéed spinach or bell peppers
  • 1/2 Onion, chopped Yellow or sweet onions are best
  • 1/2 Red Bell Pepper, diced
  • 1/2 Green Bell Pepper, diced
  • 1 tsp Garlic, minced Can substitute with garlic powder
For the Base
  • 4 large Flour Tortilla Burrito-sized
For Finishing Touches
  • 1 Tbsp Olive Oil, divided Vegetable oil can be used
  • 2 tsp Mayonnaise Consider Greek yogurt or sour cream
  • Salt To taste
  • Pepper To taste

Method
 

Cooking Steps
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat for 1-2 minutes.
  2. Add the cheese steak beef and cook for 4-5 minutes until browned. Season with salt and pepper, then drain excess grease.
  3. In the same skillet, add 1 teaspoon of olive oil and sauté chopped onion, red and green bell peppers, and mushrooms for 3-4 minutes.
  4. Return cooked beef to the skillet, add minced garlic, and sauté for another 1-2 minutes.
  5. Spread 1 teaspoon of mayonnaise on one side of each tortilla. Layer beef and vegetable mixture, topping with provolone cheese.
  6. Fold each tortilla in half and cook in the skillet for 3-4 minutes on each side until golden brown and crispy.
  7. Transfer to a cutting board, let rest for a minute, then slice into wedges and serve immediately.
