  • 1 cup all-purpose flour substitute with gluten-free flour if needed
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar coconut sugar is a great alternative
For the Filling
  • 1 cup crushed pineapple fresh or well-drained canned
  • 2 large eggs room temperature
  • 1/2 cup granulated sugar or honey/agave syrup
  • 1 teaspoon vanilla extract or almond extract
  • 1/2 cup shredded coconut optional
For Serving
  • 1 tablespoon powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan with butter or non-stick spray.
  2. In a mixing bowl, combine melted butter, flour, and granulated sugar. Stir until crumbly.
  3. Press the mixture into the bottom of the prepared pan to form a crust.
  4. Bake the crust for 10-12 minutes until light golden brown. Allow to cool slightly.
  5. In another bowl, whisk together eggs, granulated sugar, pineapple, and vanilla until smooth.
  6. Optional: Fold in shredded coconut for texture.
  7. Pour the filling over the baked crust and spread it evenly.
  8. Bake for 20-25 minutes until filling is set and edges are golden brown.
  9. Allow the bars to cool completely in the pan before cutting into squares.
  10. Dust with powdered sugar before serving.
