Method
 

Steps
  1. Begin by peeling and chopping the fresh pineapple into chunks.
  2. In a smoothie maker, combine the prepared pineapple chunks, juice of one lemon, and a cup of water. Blend until smooth.
  3. Pour the pineapple mixture through a fine sieve into a large bowl to extract juices.
  4. Prepare your glasses by dipping the rims in water, then lightly in sugar.
  5. Fill each sugar-rimmed glass with ice cubes.
  6. Pour the sieved pineapple mixture over the ice in each glass.
  7. Garnish each mocktail with a sprig of fresh mint.
