Step-by-Step Instructions
  1. In a large mixing bowl, cream together the butter, pistachio pudding mix, and sugar until smooth and fluffy, about 3-4 minutes. Beat in eggs, vanilla, and almond extract until fully combined. Gradually fold in flour, baking powder, and salt until no dry flour remains.
  2. Lightly grease a 9x13-inch baking pan. Press the dough evenly into the bottom of the pan. Bake in a preheated oven at 350°F for approximately 20-25 minutes, or until the edges are lightly golden and the center is set but soft. Allow to cool in the pan.
  3. Once cooled, prepare the cream cheese frosting by beating together the cream cheese and softened butter until creamy, about 2 minutes. Gradually add powdered sugar to taste, then mix in vanilla extract until well combined.
  4. Spread the cream cheese frosting over the cooled bars and sprinkle with chopped pistachios if desired. Allow frosting to set for a few minutes before slicing into squares.
