- In a large mixing bowl, cream together the butter, pistachio pudding mix, and sugar until smooth and fluffy, about 3-4 minutes. Beat in eggs, vanilla, and almond extract until fully combined. Gradually fold in flour, baking powder, and salt until no dry flour remains.
- Lightly grease a 9x13-inch baking pan. Press the dough evenly into the bottom of the pan. Bake in a preheated oven at 350°F for approximately 20-25 minutes, or until the edges are lightly golden and the center is set but soft. Allow to cool in the pan.
- Once cooled, prepare the cream cheese frosting by beating together the cream cheese and softened butter until creamy, about 2 minutes. Gradually add powdered sugar to taste, then mix in vanilla extract until well combined.
- Spread the cream cheese frosting over the cooled bars and sprinkle with chopped pistachios if desired. Allow frosting to set for a few minutes before slicing into squares.
