- Preheat your oven to 350°F (175°C) and gather your ingredients.
- Cream together ½ cup of softened unsalted butter and 1 cup of sugar for about 3-4 minutes until light and fluffy.
- Add the zest of 2 lemons, 1 egg, 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract. Mix until well blended.
- In a separate bowl, whisk together 2 cups of flour, ½ teaspoon of baking soda, ½ teaspoon of baking powder, and a pinch of salt. Gradually fold into the wet mixture.
- Drop spoonfuls of dough onto a prepared baking sheet, spacing them about 2 inches apart. Bake for 10 minutes.
- Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
- Beat 8 oz of softened cream cheese and ¼ cup of butter until smooth. Gradually add 2 cups of powdered sugar and 1 tablespoon of lemon zest.
- To assemble, spread the cream filling on the flat side of one cookie and top with another cookie.
