Equipment

  • Medium saucepan
  • fine mesh strainer
  • large pitcher

Method

Step-by-Step Instructions
  1. In a medium saucepan, combine 2 cups of chopped ripe peaches, 1 cup of sugar, and 2 cups of water. Cook over medium-high heat, stirring frequently until the mixture reaches a boil. Allow it to bubble for about 5 minutes, ensuring the sugar dissolves completely and the peaches soften.
  2. Reduce the heat to low and let the peach mixture simmer for an additional 5–10 minutes, stirring occasionally. Once cooked, remove from heat and let it cool for about 30 minutes.
  3. Place a fine mesh strainer over a bowl or pitcher and carefully pour the mixture through to separate the syrup from the peach solids, pressing down gently to extract as much syrup as possible.
  4. In a large pitcher, mix 1 cup of the freshly made peach syrup with 1/3 cup of freshly squeezed lemon juice and 3 cups of cold water. Stir well to combine.
  5. Taste your peach lemonade and adjust the sweetness or tartness to your preference.
  6. Fill tall glasses with ice cubes, pour the peach lemonade over, and garnish with peach slices, lemon wedges, and a sprig of fresh mint.
