Step-by-Step Instructions for Strawberry Peach Soda
  1. Start by washing and slicing 2 ripe peaches and 1 cup of strawberries into small pieces.
  2. In a medium-sized pot, combine the sliced peaches, strawberries, 1 cup of water, 1/4 cup of cane sugar, and 2 tablespoons of freshly squeezed lemon juice. Bring the mixture to a low boil over medium heat, stirring occasionally. Once boiling, reduce the heat and let it simmer for about 20 minutes.
  3. After simmering, remove the pot from heat and let the syrup cool down for a few minutes. Using a fine mesh strainer, carefully strain the syrup into a heat-proof container.
  4. Allow the strained syrup to cool completely at room temperature, then transfer it to the refrigerator to chill for at least 30 minutes.
  5. Once the syrup is chilled, pour in about 2 ounces of the chilled syrup over the ice, then add 6 ounces of sparkling water.
  6. Garnish each glass with additional fresh strawberry slices and peach wedges.
