Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add in the egg and mix well until fully combined, about 1-2 minutes.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually incorporate this into the wet ingredients.
  5. Beat cream cheese until smooth, add a touch of sugar and blend until well combined.
  6. Scoop cookie dough onto baking sheets, spacing each dough ball about 2 inches apart.
  7. Make an indentation in the center of each dough ball and spoon in the cream cheese filling.
  8. Bake for 12-14 minutes or until edges are lightly golden. Centers should remain soft.
  9. Allow cookies to cool completely on baking sheets for about 10-15 minutes.
