Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop bell peppers, onion, and spinach into bite-sized pieces.
  3. Whisk together six eggs in a medium mixing bowl.
  4. Cook the turkey sausage in a skillet over medium heat, breaking it into small pieces until browned.
  5. Sauté the chopped onion and bell peppers in the same skillet for about 2 minutes.
  6. Add spinach to the skillet and stir until just wilted.
  7. Combine the vegetables and sausage in the skillet, sprinkle with seasoning, and mix well.
  8. Grease a 9x13 casserole dish and spread the sausage and vegetable mixture evenly.
  9. Pour the whisked eggs over the sausage and veggie mixture.
  10. Bake for 25-30 minutes until edges are golden and a knife inserted in the center comes out clean.
  11. Let cool for 5-10 minutes, then slice into squares and serve warm.
