- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine BBQ sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper. Whisk until well blended.
- Coat the chicken thighs in the marinade and place them in a baking dish.
- Bake for 35-40 minutes or until golden brown and cooked through.
- While the chicken bakes, peel and cut the potatoes into chunks and boil in salted water for 15-20 minutes.
- Drain the potatoes, return them to the pot, and add the heavy cream, Parmesan cheese, minced garlic, butter, salt and pepper. Mash until smooth.
- Let the chicken rest for 5 minutes after baking.
- Plate the mashed potatoes and chicken, garnishing with parsley if desired.
