Creamy Garlic Parmesan Potatoes Ingredients
  • 2 pounds Yukon Gold Potatoes Great for mashing.
  • 1/2 cup Heavy Cream For richness.
  • 1/2 cup Grated Parmesan Cheese For creaminess.
  • 2 cloves Minced Garlic For aromatic flavor.
  • 4 tablespoons Unsalted Butter For creamy texture.
  • 2 tablespoons Fresh Parsley Optional garnish.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine BBQ sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper. Whisk until well blended.
  3. Coat the chicken thighs in the marinade and place them in a baking dish.
  4. Bake for 35-40 minutes or until golden brown and cooked through.
  5. While the chicken bakes, peel and cut the potatoes into chunks and boil in salted water for 15-20 minutes.
  6. Drain the potatoes, return them to the pot, and add the heavy cream, Parmesan cheese, minced garlic, butter, salt and pepper. Mash until smooth.
  7. Let the chicken rest for 5 minutes after baking.
  8. Plate the mashed potatoes and chicken, garnishing with parsley if desired.
