  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
  • 1 tablespoon Olive Oil for grilling
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt or coconut yogurt for dairy-free
  • 1 tablespoon Lemon Juice freshly squeezed

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, onion, garlic, and parsley. Sprinkle in cumin, coriander, salt, and pepper. Mix until evenly incorporated.
  2. Wet hands gently and shape the mixture into oval-shaped patties, making about 10 to 12 kofta.
  3. Preheat grill to medium-high heat (180°C to 200°C). Brush grates with olive oil.
  4. Place kofta on grill, cooking for 5-7 minutes on each side until golden brown and internal temperature reaches 75°C (165°F).
  5. In a separate bowl, mix yogurt, lemon juice, and a pinch of salt until smooth. Optionally add minced garlic.
  6. Remove kofta from grill, let rest for a couple of minutes, then serve alongside garlic yogurt sauce.
